Luxurious Tray of Oven-Roasted Root Vegetables with Beetroot & Creamy Goat Cheese

Oven-roasted root vegetables are always a hit. Here you can choose and pick among your favorite root vegetables and roast them wonderfully crispy together with fruity beetroot and delightfully creamy melted baked cheese. This is what you need:

Recipe for roasted root vegetables:

Potato
Beetroot
Carrots
Parsnip
Goat cheese
Arugula
Olive oil, salt & pepper

Sauce:

Greek yogurt
Honey
Black pepper

Instructions:

  1. Preheat the oven to 225 degrees
  2. Peel the root vegetables with a potato peeler & dela dem på en cutting board

  5. Roast in the oven for about 35-40 min

Recipe for fresh potatoes on the grill:

Small new potatoes
Peeled and finely chopped garlic
Chopped fresh parsley
Butter
Salt
Freshly ground black pepper
Juice from lemon

Instructions:

  1. Wash and scrub the potatoes
  2. Cook the potatoes in salted water until they are almost done. There should be a little core left.
  3. Place the potatoes on sheets of metal foil. About 6-7 potatoes on each sheet.
  4. Click on the butter.
  5. Top with chopped garlic, parsley, salt, and pepper
  6. Pinch the foil into a package.
  7. Grill the foil packet for 5-10 minutes.
  8. Open the package and squeeze some lemon juice over before serving

Recipe for smashed potatoes:

Potatoes
Parmesan
Olivolja
Salt
Pepper
Fresh thyme

Instructions:

  1. Preheat the oven to 225 degrees
  2. Boil the potatoes whole
  3. Once it has finished cooking, drain the water and let it steam off a bit
  4. Crush the potato with the bottom of a glass or a fork
  5. Drizzle with olive oil and season with salt and pepper.
  6. Sprinkle with parmesan
  7. Bake your crushed potatoes in the oven for about 20-30 minutes, or until they are golden and have a crispy surface.
  8. Sprinkle fresh thyme before serving
