Oven-roasted root vegetables never fail. Here you can pick and choose your favorite root vegetables and roast them wonderfully crispy together with fruity beetroot and deliciously creamy melted goat cheese in the oven. Here’s what you need:

Recipe for roasted root vegetables:

Potatoes
Beetroot
Carrots
Parsnip
Goat cheese
Arugula
Olive oil, salt & pepper

Sauce:

Greek yogurt
Honey
Black pepper

Instructions:

  1. Preheat the oven to 225 degrees
  2. Peel the root vegetables with a potato peeler & cut them on a cutting board
  3. Place the peeled root vegetables on a baking tray
  4. Drizzle with olive oil & season with salt & pepper
  5. Roast in the oven for about 35-40 minutes
  6. When there are a few minutes left, crumble goat cheese on top
  7. Remove from the oven & top with fresh arugula
  8. Serve with delicious sauce & optional sides

Grill potatoes in foil - Make use of locally grown new potatoes

It’s not just meat and vegetables that can go on the grill, of course potatoes can too! New potatoes are incredibly delicious to grill. If you cook them in grill foil you also avoid the risk of them falling through or sticking to the grill grate. Here’s how to get the absolute tastiest new potatoes in foil on the grill:

Recipe for new potatoes on the grill:

Small new potatoes
Peeled & finely chopped garlic
Chopped fresh parsley
Butter
Salt
Freshly ground black pepper
Juice from lemon

Instructions:

  1. Wash & brush the potatoes.
  2. Boil the potatoes in salted water until they are almost done. There should be a little core left.
  3. Place the potatoes on sheets of aluminum foil. About 6-7 potatoes per sheet.
  4. Add dollops of butter.
  5. Top with chopped garlic, parsley, salt & pepper.
  6. Pinch the foil together to make a packet.
  7. Grill the foil packet for 5-10 minutes.
  8. Open the packet and squeeze some lemon juice over before serving

Tip! Many wonder how much potato per person to count on. The simple answer is about 200-250 grams of unpeeled potatoes per person, which corresponds to about 2-3 medium-sized potatoes.

Smashed potatoes - How to succeed with this summer’s trendiest recipe

Yes! The time is not over yet for our incredibly trendy smashed potatoes, also called crushed potatoes, which is perhaps not surprising since they are so amazingly good! A perfect balance between a crispy outside and a soft fluffy inside. That’s why we couldn’t resist including our absolute favorite recipe for this simple and quick summer delicacy:

Recipe for smashed potatoes:

Potatoes
Parmesan
Olive oil
Salt
Pepper
Fresh thyme

Instructions:

  1. Preheat the oven to 225 degrees
  2. Boil the potatoes whole
  3. When boiled, drain the water & let them steam off a bit
  4. Crush the potatoes with the bottom of a glass or a fork
  5. Drizzle with olive oil & season with salt & pepper
  6. Sprinkle on parmesan
  7. Bake your smashed potatoes in the oven for about 20-30 minutes, or until golden & crispy on the outside
  8. Sprinkle fresh thyme before serving

Tip! The secret to the perfect smashed potatoes is not to have them in the oven too short or too long. You want to take them out when they have that perfect golden surface with wonderfully crispy edges.
