Oven-roasted root vegetables never fails. Here you can pick and choose among your favorite root vegetables and roast them deliciously crispy together with fruity beetroot and wonderfully creamy melted baked cheese. This is what you need:

Recipe for roasted root vegetables:

Potatoes
Beetroot
Carrots
Parsnip
Goat cheese
Arugula
Olive oil, salt & pepper

Sauce:

Greek yogurt
Honey
Black pepper

Do as follows:

  1. Preheat the oven to 225 degrees
  2. Peel the root vegetables with a potato peeler & share them on a cutting board
  3. Place the peeled root vegetables on a baking tray
  4. Drizzle with olive oil & season with salt & pepper
  5. Roast in the oven for about 35-40 minutes
  6. When there are a few minutes left, crumble the goat cheese on top
  7. Take out of the oven & top with fresh arugula
  8. Serve with delicious sauce & optional sides

Grill potatoes in foil - Make use of locally grown new potatoes

It's not just meat and vegetables that can go on the grill, of course, potatoes can too! New potatoes is incredible good for grilling. Do you cook them in grill foil you also avoid the risk of them falling down or getting stuck in the grill grate. Here's how to achieve the absolute tastiest new potatoes in foil on the grill:

Recipe for new potatoes on the grill:

Small new potatoes
Peeled & finely chopped garlic
Chopped fresh parsley
Butter
Salt
Freshly ground black pepper
Juice from lemon

Do like this:

  1. Wash & brush the potatoes.
  2. Boil the potatoes in salted water until the potatoes are almost done. There should be a slight core remaining.
  3. Place the potatoes on sheets of aluminum foil. About 6-7 potatoes on each sheet.
  4. Click on the butter.
  5. Top with chopped garlic, parsley, salt & pepper.
  6. Pinch the foil together into a package.
  7. Grill the foil packet for 5-10 minutes.
  8. Open the package and squeeze some lemon juice over before serving

Recipe for smashed potatoes:

Potatoes
Parmesan
Olive oil
Salt
Pepper
Fresh thyme

Do this:

  1. Preheat the oven to 225 degrees
  2. Boil the potatoes whole
  3. When it has finished boiling, pour off the water and let it steam off a little
  4. Crush the potatoes with the bottom of a glass or a fork
  5. Drizzle with olive oil & season with salt & pepper
  6. Sprinkle on parmesan
  7. Bake your crushed potatoes in the oven for about 20-30 minutes, or until they are golden and have a crispy surface
  8. Sprinkle with fresh thyme before serving
