Basic recipe for applesauce
Apple sauce is a side dish that goes just as well with breakfast as it does with Sunday roast. This simple recipe yields about 5 dl of homemade apple sauce, which can be frozen to keep it fresh for longer.
You need:
1 kg ripe apples
0.5 dl water
0.5 dl granulated sugar

Peel Core the apples and cut away any rotten or damaged parts. Cut the apples into wedges and place them in a bowl of cold water.

Put the apples in a saucepan and bring to a boil together with water over low heat. Stir occasionally and check with a potato stick when the apples are soft.

Stir in the sugar and bring to a boil again.

Remove the pot from the stove and mash the apples with a spoon, hand blender, or food processor until you have a smooth puree without large pieces.

Pour into storage jars and let cool before placing the apple sauce in the fridge/freezer.
Simple apple tzatziki
This apple tzatziki recipe is a really fresh and slightly different take on the classic tzatziki. A perfect side dish for grilled meat, chicken, or vegetables!
You need:
1 apple
1 garlic clove
2 tbsp parsley
2 dl cooking yogurt
Olive oil
Salt
Pepper
Do like this:

Grate the apple coarsely on a grater. Peel and press the garlic.

Chop the parsley and mix it together with apple, garlic, and plain yogurt in a bowl.

Season with salt and pepper and finish with a drizzle of olive oil.
Homemade apple cider
Make use of leftover apples by making your own refreshing apple drink. Perfect as a thirst-quenching refreshment or a drink to accompany dinner. The recipe yields about 5 liters of finished apple drink.
You need:
2 kg Swedish apples, e.g. Aroma or Ingrid Marie
6 liters of cold water
1 tsp sodium benzoate
1 tbsp citric acid
5 dl granulated sugar

Rinse the apples and cut into wedges. Leave the shell on.

Add apples, water, sodium benzoate, and citric acid to a large bowl or bucket.

Cover with plastic wrap or a lid and store in a cool place for 3 days. Stir once a day.

Strain the apple cider and discard the apples. Add the sugar and stir until it dissolves. Pour the finished apple drink into bottles and store in a cool place. The drink will keep for about 1-2 weeks.

Crunchy apple pie with cinnamon and cardamom
Apple pie is a true classic that you can never get enough of. The butter and syrup create a wonderfully crunchy surface that pairs perfectly with juicy apples. Just as delicious for an afternoon coffee break as it is for the weekend dessert.
You need:
4 large apples
2.75 dl granulated sugar
2 tbsp brown sugar
3 tsp ground cinnamon
2 tsp ground cardamom
4 tbsp potato starch
2 tsp salt
3 dl rolled oats
1.5 dl wheat flour
1 tsp baking powder
2 tsp vanilla sugar
175 g butter
0.5 dl light syrup
Vanilla ice cream or vanilla sauce for serving
Do this:

Preheat the oven to 175 degrees.

Peelcore and cut the apples into smaller pieces.

Mix apples, 0.75 dl granulated sugar, brown sugar, cinnamon, cardamom, and potato starch in a pile. Distribute the mixture in a pie dish.

Mix the remaining sugar, salt, oats, flour, baking powder, and vanilla sugar in another bowl.

Melt the butter in a saucepan. Pour the butter and syrup into the bowl and stir until you have a smooth batter. Spread the batter evenly over the apples.

Bake in the middle of the oven for about 30-40 minutes or until it has a nice color.

Simple apple muffins with cinnamon
These moist muffins filled with small pieces of apple and cinnamon are perfect to take on a trip or to serve to guests. The recipe makes about 12 apple muffins.
You need:
100 g butter
2 eggs
2 apples
2 dl granulated sugar
1.5 dl milk
2 tsp baking powder
2 tsp cinnamon
1 tsp salt

Preheat the oven to 200 degrees.

Whisk the eggs and sugar until fluffy in a bowl.

Melt the butter in a saucepan and let cool.

Mix flour, baking powder, cinnamon, and salt in another bowl.

Stir the dry ingredients into the egg mixture. Add the milk and the melted butter.

500 g apples
1 dl roasted, shelled hazelnuts
¾ dl granulated sugar
2 tsp ground cinnamon
¾ dl raisins
2 tbsp breadcrumbs
50 g butter
4 filo pastry sheets
2 tbsp powdered sugar
Vanilla ice cream for serving

Preheat the oven to 250 degrees.

Peel, core and cut the apples into smaller pieces, about 1 cm.

Chop the hazelnuts and mix the apples, nuts, sugar, cinnamon, and raisins in a bowl.

Melt the butter in a saucepan. Lay out 1 sheet of filo pastry and brush with butter. Place another sheet on top and brush with butter. Continue until all filo pastry sheets are used and there is butter between each layer.

Spread the apple filling evenly over the filo pastry, leaving about 2 cm of the edge clear. Roll up the filo pastry into a log and pinch the ends together. Place the filo roll on a baking sheet lined with parchment paper, seam side down, and brush the roll with the remaining butter.

Bake in the middle of the oven for about 35 minutes.

Take the apple strudel out of the oven and let it rest for about 5 minutes.

Dust with powdered sugar and cut the roll into pieces.
