Baking molds in silicone and carbon steel come in many different shapes and designs suitable for various types of baking. The materials have different properties and work in different ways. An important part of succeeding in baking is therefore to choose the right baking mold that suits you.
Bake in silicone mold
The big difference between a silicone mold and a carbon steel mold is the softness and flexibility of the silicone, something that many appreciate. It also has a non-stick surface which means you don't need to grease the mold before use. Additionally, it becomes easy to remove the cake from the mold.
The advantage of using a silicone mold for baking is that it can also be washed in the dishwasher and does not absorb color or odor. The silicone mold can withstand high temperatures and can tolerate cold down to -60 degrees, making it perfect for food or baked goods that need to be stored in the freezer.
Baking pans in carbon steel
A baking pan in carbon steel works just as well for baking as for cooking. The carbon steel pan is stable and has a non-stick coating similar to that of a silicone pan, which allows the cake to easily release from the edges. Therefore, you do not need to grease a carbon steel pan, but if you want to ensure that the cake does not stick, you can grease it with a thin layer of cooking fat.
The carbon steel mold also becomes warmer than a silicone mold and therefore distributes the heat so that the cake is evenly baked while you don't have to worry about the coating peeling off, which is common with Teflon. In addition, the carbon steel mold is easy to clean and can be washed in the dishwasher.
Bake in a Teflon mold
A baking or oven dish in Teflon is not dangerous to use but has a more sensitive surface than carbon steel and silicone. The Teflon coating is easily damaged by hard and sharp objects, and parts of the coating can therefore come off. Dorre currently does not offer any Teflon dishes as we instead focus on those made of carbon steel and silicone.
Is Teflon dangerous?
Getting Teflon coating in your food is not dangerous but not always fun, which results in a Teflon mold often ending up in the trash after a few years. Additionally, Teflon is more sensitive to heat than other materials and can release toxic gases such as PFOA and PTFE at high temperatures.
Recipe for sponge cake
Sponge cake is both delicious and simple and is suitable for almost any occasion. Follow the recipe below or discover more lovely recipes here.
Ingredients:
- 2 eggs
- 2 dl granulated sugar
- 50 g butter or margarine
- 1 dl milk
- 3 dl wheat flour
- 1 tbsp vanilla sugar
- ½ tsp baking powder
Instructions:
- Set the oven to 175ºC.
- Grease and flour the mold. If you are using a silicone mold, you can go directly to step 3.
- Whisk eggs and sugar until fluffy in a bowl, preferably with an electric whisk.
- Melt the fat and mix it with the milk. Stir the mixture into the bowl.
- Mix the wheat flour, vanilla sugar, and baking powder and gently fold it into the batter. Pour the batter into the mold.
- Bake in the lower part of the oven for about 35 minutes. Check with a skewer if the cake is done. The skewer should be dry when the cake is finished.
