The tradition of seven kinds of cookies dates back to the 1900s, when a coffee invitation was considered complete when the hostess served exactly seven different cookies - a charming tradition that we are more than happy to keep alive! Here we have gathered our best recipes for cookies you must try for your next coffee gathering! 

What cookies are included in the seven kinds of cookies?

Seven kinds of cookies usually don't refer to the exact types of cookies being baked, but rather that there are seven different varieties. A coffee break with seven kinds of cookies can therefore be varied according to taste, but some real classics like checkerboard cookies, Finnish sticks, jam-filled cookies, and caramel slices often appear on the coffee table!

  1. Schackrutor - classic shortcrust pastry cookie with a two-colored pattern

Ingredients:

200 g butter
1 tbsp vanilla sugar
1 dl granulated sugar
4 ½ dl all-purpose flour
1 ½ tbsp cocoa

Do this:

  1. Mix butter, vanilla sugar, granulated sugar, and wheat flour in a bowl and combine to form a dough. 

  2. Divide the dough into two equal parts. Add cocoa to one of the doughs and knead until the dough has an even brown color. 

  3. Flatten the dough pieces slightly and place them in a plastic bag or wrap them in plastic wrap. Let them rest in the fridge for about 30 minutes. 

  4. Preheat the oven to 175°C.

  5. Take the dough out of the fridge and divide both the light and dark dough into two equal parts. Roll them out into finger-thick lengths.

  6. Combine the four lengths. Start with a light and a dark one at the bottom, and then a dark and a light one on top so they form a checkerboard pattern. Press the dough so that the rolls become square. 

  7. Cut the dough into slices about 1-2 cm thick and place on a baking sheet lined with parchment paper. Bake in the middle of the oven for about 10 minutes.

  1. Almond shells - Crispy almond-shaped molds with filling

Ingredients:

2 dl sweet almonds
4 pcs bitter almonds
200 g butter
1 ½ dl granulated sugar
1 egg
4 dl all-purpose flour
Jam & whipped cream for topping

Do this:

  1. Blanch, peel, and grind trade. Whisk sugar and butter in a bowl until a fluffy mixture forms. Mix in almonds, eggs, and flour, and work together into a dough. Let rest in the fridge for about 30 minutes. 

  2. Preheat the oven to 200°C. Brush the fluted molds with melted butter and press the dough into a thin layer. Bake in the lower part of the oven for about 8 minutes or until they are golden brown. 

  3. Take the molds out of the oven and carefully turn out the almond shells from the molds while they are still slightly warm. 

  4. Serve with whipped cream and your choice of jam.

  1. Finnish sticks - Crunchy cookies with almond & pearl sugar

Ingredients:

5 pcs bitter almonds
200 g butter
4 ½ dl all-purpose flour
½ dl granulated sugar
1 egg
½ dl chopped sweet almonds
2 tbsp pearl sugar

Do this:

  1. Grate bitter almond finely on a grater. Cut the butter into smaller pieces and knead together butter, flour, sugar, and bitter almond into a dough. Let it rest in the fridge for about 30 minutes.

  2. Preheat the oven to 200°C.

  3. Divide the dough into four equal parts. Roll the parts into elongated lengths, about 60 cm. 

  4. Whisk the eggs in a bowl and brush the lengths. Sprinkle with chopped sweet almonds and pearl sugar. Divide the lengths into equal parts, about 4-5 cm. 

  5. Spread the sticks out on a baking sheet lined with parchment paper and bake in the middle of the oven for about 10 minutes or until golden brown.

Ingredients:

200 g butter
1 dl granulated sugar
4 ½ dl all-purpose flour
1 tsp baking powder
2 pcs vanilla sugar
1 dl raspberry jam

Do this:

  1. Preheat the oven to 200°C.

  2. Cut the butter into smaller pieces and mix with flour, sugar, baking powder, and vanilla sugar in a bowl. Knead into a dough or use a food processor. 

  3. Shape the dough into balls the size of a walnut and distribute them in baking molds on a tray.

  4. Press a small dent in the center of all the cookies and fill with jam. 

  5. Bake in the middle of the oven for 7-10 minutes.

Ingredients:

100 g room temperature butter
1 dl granulated sugar
1 tbsp vanilla sugar
1 tbsp light syrup
2 ½ dl all-purpose flour
1 tsp baking powder

Do this:

  1. Preheat the oven to 175°C.

  2. Mix all the ingredients in a bowl and work them together into a dough, either by hand, in a food processor, or with an electric mixer. 

  3. Divide the dough into two equal parts and shape into two elongated rolls. 

  4. Place the dough rolls on a baking sheet lined with parchment paper and flatten them to about 0.5 cm thick. 

  5. Bake in the middle of the oven for 10-12 minutes. 

  6. Take the cookies out of the oven and cut the cookies diagonally into 3 cm wide pieces.

Brysselkex - goda småkakor med rosa socker
  1. Brussels Cookies - Simple Shortcrust Cookies with Pink Sugar

Ingredients:


200 g butter
2 dl granulated sugar
1 tsp vanilla sugar
4 ½ dl all-purpose flour
1 tsp red food coloring

Do this:

  1. Mix butter, vanilla sugar, wheat flour, and half of the sugar in a bowl and work into a dough. Flatten the dough and wrap it in plastic. Let it rest in the fridge for about 30 minutes. 

  2. Preheat the oven to 175°C.

  3. Roll out the dough into rolls 4 cm thick.

  4. Mix the remaining sugar in a bowl with food coloring until you achieve a nice pink color. 

  5. Roll the dough lengths in the sugar and let rest in the fridge for another 30 minutes. 

  6. Slice the lengths into approximately 1 cm thick slices and arrange them on a baking tray lined with parchment paper. 

  7. Bake in the middle of the oven for about 8 minutes.

Baka spröda småkakor - recept på krispiga drömmar
  1. Dreams - Crispy Cookies

Ingredients:

50 g butter
1 ½ dl granulated sugar
1 tsp vanilla sugar
½ dl rapeseed oil
½ tsp ammonium bicarbonate
2 dl all-purpose flour

Do this:

  1. Preheat the oven to 150°C.

  2. Mix butter, sugar, and vanilla sugar into a batter. Gradually add the oil while whisking.

  3. Mix the ammonium bicarbonate with half of the flour and stir it into the dough. Work in the rest of the flour until you have a good dough. 

  4. Roll the dough into small balls and distribute them on a baking sheet lined with parchment paper.

  5. Bake in the oven for about 15-20 minutes. 

  6. Take the cookies out of the oven and let them cool on the tray so they don't break. 

Tip! Serve your seven kinds of cookies on a cake stand in 3 tiers for an elegant presentation.
