Recipe for cheap food - save money with meal prep

What will the food be today?

It is perhaps the most asked question in Sweden, or what do you think? We know that it can be difficult to answer that question and come up with what you should cook for dinner tonight and not least for the whole week. Especially in these times when many of us would like to keep costs down as much as possible! 

Large cooking meal boxes

Most often when thinking about keeping food costs down, it's bulk cooking that comes to mind - and how fun is that, you might think? But it doesn't have to be dry and boring, on the contrary! Bulk cooking can really be a flavor sensation and a lifesaver when you want to save some money on food. 

Below we have gathered a meal plan for the upcoming month where we do three large cookings a week. Most dishes also have ingredients that are included in several dishes, which makes this the perfect meal plan for cheap and good food. Scroll down to read more!

Recept på pasta med tomat och frasig kyckling

Weekly meal plan with cheap food - recipes week 1

Red coconut milk stew with cod and noodles

Ingredients: 

1 can coconut milk
3 tsp red curry paste
1 package egg noodles
1 package frozen cod (or other white fish)
1 lime
Chili

Instructions: 

1. Heat up coconut oil (regular oil works fine)
2. Sauté red curry paste in the oil
3. Add coconut milk
4. Add lime zest, salt, and sugar
5. Boil the noodles for half the time indicated on the package (they will finish cooking in the sauce)
6. Add cod to the coconut milk
7. Squeeze in lime and top with chili

Creamy pasta with a taste of tomato, served with crispy chicken

Ingredients: 

1 whole garlic
1 yellow onion
3 tbsp veal stock
1 package crushed tomatoes
1 dl cream 
½ dl pasta water
Chicken 
Flour
Egg
Breadcrumbs

Instructions: 

1. Preheat the oven to 175 degrees
2. Place the garlic in the oven and let it become soft
3. Fry the onion and blend in the oven-warm garlic
4. Season with veal stock
5. Boil pasta (with plenty of salt) and save about 1 dl of pasta water for the sauce
6. Pour in crushed tomatoes, cream, and pasta water
7. Bread the chicken and fry in butter, season with salt and pepper (if you don't have ingredients at home for breading, you can just fry the chicken as it is)
8. Mix the pasta with the sauce and serve with the chicken!

Shakshuka

You need (4 servings):

1 dl Red lentils (dried)
2 packages Crushed tomatoes
1 pc Broccoli (frozen also works well)
2 pcs Red bell pepper 
1 pc Onion
2 tbsp Tomato paste
1.5 dl Water
Cumin
Paprika powder
Salt & pepper
4 pcs Eggs
1 package Feta cheese (optional)
Bread

Here's how to do it: 

1. Dice the bell pepper & broccoli, and chop the onion. Sauté in a pan over medium heat for a few minutes.
2. Add red lentils & spices and cook for another minute.
3. Pour in crushed tomatoes, water, & tomato paste, and let simmer for 10-15 minutes (or until the lentils are done).
4. Make a well in the tomato sauce and crack an egg into it. Repeat with the remaining eggs and simmer until the egg whites are no longer translucent. (Tip: Cover with a lid for the last few minutes for perfectly cooked eggs.)
5. Plate your shakshuka, sprinkle with feta cheese, and serve with bread for dipping.

Lax patties with wedge potatoes and sweet and sour sauce

Ingredients:

1 package frozen salmon mince
Breadcrumbs/panko
Egg
Potato
2.5 dl sour cream 
Lime
1 tsp honey

Here's how to do it: 

1. Mix the salmon mince with salt, pepper, ½ dl breadcrumbs and one egg. Then shape the mince into patties of your desired size. 
2. Cut the potatoes into wedges, place on a baking sheet and put in the oven with a little oil at 225 degrees for 25 minutes. 
3. For the sauce: mix together creme fraiche with lime zest and a teaspoon of honey. Salt and pepper to taste.  
4. Fry the steaks, plate everything and serve with your choice of vegetables. Enjoy your meal!

Sour sweet wok with noodles, bacon, and vegetables

Ingredients:

2-3 dl sweet and sour sauce
1 package egg noodles
3-4 packs of bacon
1 bag of frozen vegetables

Here's how to do it: 

1. Fry bacon until crispy consistency
2. Boil the noodles according to the instructions on the package 
3. Fry the frozen vegetables with bacon
4. Mix everything together and season with sweet and sour sauce

The world's tastiest soup with potatoes and parsnips

Ingredients: 

Potato
1 parsnip
2 yellow onions
Vegetable broth
Parmesan 
Cooking cream to taste (approx. 1-3 dl)

Instructions: 

1. Fry potatoes, parsnip, and yellow onion
2. Pour in boiling water so that it just covers the surface
3. Season with salt, pepper, and vegetable broth
4. Turn off and add parmesan and cooking cream
5. Blend together with an immersion blender and enjoy!

Weekly meal plan with cheap food - recipes week 3

Tuna spread on crispbread

Ingredients:

Tuna (1-2 cans)
1 dl mayonnaise
1 dl sour cream 
1 dl sandwich cucumber
1 tbsp Dijon mustard
2 tomatoes
Lemon
Crispbread
Salt and pepper

Here's how to do it: 

1. Mix together tuna, mayonnaise, and sour cream.
2. Chop pickled cucumber and tomatoes - add to the tuna mixture.
3. Season with Dijon mustard, lemon, salt, and pepper.
4. Spread the mixture on the crispbread and enjoy!

Oven-baked falukorv with mashed potatoes 

Ingredients: 

Swedish sausage
Mustard
Cheese
Tomatoes
Yellow onion 
Potato 
Milk 
Butter

Instructions: 

1. Take a baking dish and place it in the oven at 175 degrees. 
2. Add the swedish sausage and make cuts all over the sausage.
3. Then stuff onion, mustard, and tomato slices into the sausage and sprinkle with grated cheese.
4. Into the oven for about 20 min! 
5. While you wait for the sausage, you can boil potatoes until they become soft.
6. Then mash the potatoes and mix with butter and milk to the desired consistency.
7. Season with salt and pepper and serve the mash together with the oven-baked falukorv!

Carrot soup recipe

Ingredients:

A package of carrots 
Broth
Soy
Water
Cooking cream (approx. 2.5 dl)
Quark or crème fraîche to top the soup with

Instructions: 

1. Peel carrots
2. Sauté the carrots with onion and garlic in oil
3. Pour in any broth and a tablespoon of soy sauce
4. Pour in water and let it boil for 20 minutes 
5. Mix with an immersion blender and stir in any cooking cream of your choice
6. Season with salt and pepper
7. Top with natural quark or crème fraîche and some grated carrots

Weekly meal plan with cheap food - recipes week 4

Homemade fish sticks with potatoes and sauce

Ingredients:

1 package Alaska pollock frozen
1 egg
Breadcrumbs/panko
Flour
1 bag of potatoes 
2.5 dl sour cream
Lemon
Frozen dill

Instructions:

1. Thaw the fish and let the water drain off. When the fish is thawed, you can pat the fillets with paper towels to remove the last moisture. Season with salt and pepper.
2. Take out three plates and pour wheat flour in one, panko/breadcrumbs in the second, and beaten egg in the third. 
3. Then turn the fish in first wheat flour, then egg and finally panko or breadcrumbs. 
4. Set the fish aside and bring the potatoes to a boil. 
5. Fry the fish when the potatoes are ready and then mix the sauce by combining creme fraiche, lemon, dill, salt, and pepper in a bowl.

Kebab stew with rice

Ingredients:

1 bag of ready-made chicken kebab (available in your freezer)
1 yellow onion 
1 garlic clove
2.5 dl sour cream 
Red kebab sauce
Season to taste and preference
Rice 

Instructions:

1. Cook rice according to the instructions on the package. 
2. Fry onions and garlic with the kebab until the meat is thawed.
3. Pour in the crème fraîche and stir.
4. Add kebab sauce and season with salt and pepper to taste.

Vegetarian pasta with creamy Dijon mustard

Ingredients:

1 yellow onion 
1 package mushrooms
Spices
1-2 tbsp Dijon mustard
Lemon
1-2 dl cooking cream
½ dl pasta water
Pasta

Instructions:

1. Fry onions and mushrooms in oil or butter.
2. Pour in cooking cream.
3. Add paprika powder and cayenne pepper.
4. Season with Dijon mustard.
5. Boil the pasta water (add plenty of salt).
6. When the pasta is ready - drain the water but save about 1 dl.
7. Add the pasta water and pasta to the cream base and stir until it becomes creamy.
8. Season with salt and pepper.
