How to make irresistibly delicious fluffy pancakes

It's actually just as easy to make fluffy Japanese pancakes at home that taste as good as the ones you get at a café. Just follow the recipe below step by step!

Ingredients:

  • 4 eggs
  • ½ dl milk
  • 1 dl wheat flour
  • 1 tsp baking powder
  • 1 pinch vanilla sugar
  • 1 pinch salt
  • ½ dl granulated sugar
  • Butter or oil for frying

Instructions:

  1. Separate the egg yolks and egg whites into separate bowls. Place the egg whites in the freezer for about 20 minutes.

  2. Whisk together the egg yolks, milk, and vanilla sugar. Sift the flour, baking powder, and salt through a fine mesh sieve.

  3. Whisk the frozen egg whites with an electric mixer until fluffy foam forms. Add sugar and whisk until you get a meringue.

  4. Gently whisk half of the egg whites into the batter, then fold in the rest with a spatula so the batter still has an airy consistency.

  5. Fry the pancakes in a frying pan with a lid over low heat in butter or oil.

  6. Serve with fresh berries, mascarpone, lemon zest, and syrup or top with cream and chocolate sauce for a more luxurious version.

Tip! For extra fluffy pancakes, add a little more pancake batter on each pancake once they have cooked a bit.
