Creamy potato and leek soup
This creamy soup with potato and leek is a true classic that is both simple and really tasty. Serve with a good, soft bread and enjoy a real comfort food.
You need:

600 g potatoes

1 leek
-
1 tbsp cooking oil
-
1 tsp dried thyme
-
1 liter vegetable broth
-
3 dl whipping cream
-
Fresh or frozen parsley
-
Salt
-
Pepper
Instructions:

Rinse, trim, and slice the leek and peel and slice the potatoes.

Heat oil in a pot and sauté the leek.

Add potatoes, broth, and thyme to the pot and let boil for about 15 minutes.

Blend the soup smooth using an immersion blender until there are no potato pieces left.

Pour in the cream and bring to a boil.
-
Season the soup with salt and pepper.

Top with chopped parsley and preferably serve with good bread.

Quick spinach soup with egg
Spinach soup is a perfect warming dinner on chilly days, or anytime you want a tasty and simple soup. It’s both healthy and super quick to make. Serve with halved eggs and enjoy!
You need:

4 eggs

1 shallot
-
1 garlic clove
-
1 tbsp butter
-
450 g frozen spinach leaves

10 dl water
-
2.5 dl whipping cream
-
2 vegetable bouillon cubes
-
2 pinches grated nutmeg
-
Salt
-
Black pepper
Instructions:

Boil the eggs according to instructions.

Partially thaw the spinach and roughly chop it.

Peel and finely chop the shallot and garlic. Melt butter in a pot and sauté the shallot until soft together with the spinach.

Pour in water and crumble in the bouillon cubes. Let boil for about 6-8 minutes.

Add cream and bring to a boil again. Quickly blend the soup with an immersion blender.

Season with salt, pepper, and nutmeg.

Cut the eggs in half and serve with the egg halves and bread.

Broccoli soup with crispy bacon
This soup with broccoli, potatoes, and crispy fried bacon is really tasty and super easy to make. A weekday favorite you will definitely want to make again!
You need:

1 yellow onion

3 medium potatoes

250 g fresh broccoli

9 dl vegetable broth

2.5 dl cooking cream

1 pack bacon

Instructions:

Peel and slice the onion and potatoes. Cut broccoli into smaller pieces (including the stem).

Bring broth to a boil in a pot and add onion, potatoes, and broccoli. Boil and let cook for about 10 minutes or until the vegetables are soft.

Cut bacon into smaller pieces and fry in a pan until crispy. Set aside until the soup is ready.

Use an immersion blender or blender to blend the soup smooth.

Add cream and bring the soup to a boil again. Season with salt and pepper.
