You need:
- 4.2 dl lukewarm water
- 1.5 tsp salt
- 3.5 tbsp olive oil
- 500 g gluten-free flour (Mix It! Universal)
- 2 g fresh yeast
- Cornmeal
Instructions:

Mix salt, flour, and yeast in a bowl. Add water and olive oil and work together into a sticky dough.

Cover the bowl with a lid or plastic wrap so that the bowl is airtight and let the dough rise in the refrigerator for 24-48 hours. (At least 24 hours and maximum 48 hours)

Take the dough out of the fridge and let it come to room temperature before you start working with it.

Sprinkle cornmeal on a work surface and divide the dough into two equal parts.

- Mozzarella

- Fresh basil
Instructions:

Preheat the oven to 250ºC.

Spread tomato sauce in an even layer on the pinsa and season with salt and pepper.

- Spread a layer of crème fraîche over the pinsa and sprinkle grated cheese on top. Salt and pepper to taste.

- While the pinsa is in the oven, finely chop red onion and dill.

You need:
- Kale
- 125 g grated mozzarella
- 1 burrata
- Olive oil
- Salt
- Pepper
Instructions:

Drain the burrata and let rest.
