Here we've gathered four truly delicious Christmas pastries, both with and without saffron. Perfect for this year's Advent coffee break, or whenever you're simply craving something that tastes like Christmas.

Moist saffron sponge cake
Saffron sponge cake is a must for Advent coffee! Perfect when you want to serve something simple, moist, and truly delicious.
Ingredients:

200 g butter

½ g saffron
-
3 dl granulated sugar

2 eggs
-
1 ½ dl milk
-
4 dl wheat flour
-
2 tsp baking powder

Butter and breadcrumbs for the baking dish

Icing sugar for decorating
Do this:

Set the oven to 175 degrees.

Grease and flour a cake tin with breadcrumbs.

Melt the butter in a saucepan and then remove the saucepan from the heat.

Mix saffron and 1 tbsp granulated sugar in a mortar and grind. Pour the mixture into the melted butter.

Whisk the remaining sugar and eggs until fluffy in a bowl. Fold in the melted butter, milk, flour, and baking powder into the bowl.

Approximately 20 gingerbread cookies

200 g cream cheese

2 dl whipping cream

Do this:

Pour thawed lingonberries into a bowl and mix with ¾ dl powdered sugar.

200 g almond paste

200 g room temperature butter

1 egg for brushing

Do this:

Melt butter in a saucepan and pour in the milk. Heat the mixture to about 37 degrees or until lukewarm.

Grind saffron together with 1 tbsp granulated sugar.

Crumble the yeast into a bowl and pour over the milk mixture. Mix until the yeast has dissolved.

Add the crushed saffron, the remaining granulated sugar, and a little of the flour at a time. Mix everything in a stand mixer with dough hooks or knead into a smooth dough for about 15 minutes. The dough should be a little sticky but still release from the sides.

Cover the dough with a kitchen towel and let it rise for about 30 minutes.

While the dough is rising, grate the almond paste using a grater and mix together with vanilla sugar and butter in a bowl.

When the dough has finished rising, place it on a floured surface and knead it lightly. Divide into two equal parts and roll out the dough into sheets about 30x40 cm in size.

Spread the almond paste filling with a knife or spatula, then fold the dough in half.

Cut the dough into strips about 2 cm wide and twist them together into buns. Fasten the end underneath so they don't unravel and place them on a baking sheet lined with parchment paper. Let rise again under a kitchen towel for about 30 minutes.
