Recipe for strawberry cake for Midsummer

Do you want to impress your guests and serve a homemade summer strawberry cake at the Midsummer party? Here is the perfect recipe for a simple and delicious Midsummer cake!

Simple Midsummer Cake Recipe

This is what you need:

4 eggs
2 dl sugar
1 dl wheat flour
1 dl potato starch
1 tsp baking powder
Vanilla custard
5 dl whipping cream
½ liter strawberries 

Here's how to do it:

  1. Set the oven to 175°C.
  2. Whisk eggs and sugar until fluffy with an electric mixer.
  3. Mix wheat flour, potato flour, and baking powder in another bowl and sift into the egg mixture. Gently fold the batter with a spatula.
  4. Pour the batter into a round silicone mold and bake in the lower part of the oven for about 30 minutes. 
  5. Let the cake cool when it is done and then divide the cake base into three parts. 
  6. Spread the marshmallow cream on the two bases that will be at the bottom and stack the parts on top of each other. 
  7. Whip cream with an electric whisk and then spread a layer over the entire cake.
  8. Divide the strawberries in half and decorate the cake.
