Really crispy, golden-brown fries are a true classic that go just as well with burgers as they do with grilled food. And the best part? You don't have to go to a restaurant to get perfect fries. With the right technique and a few simple tricks, you can make fries just as good at home.
Here we'll guide you step by step through how to make fries both in a pot and in an air fryer.

How to make your own fries
You need:
-
1 kg firm potatoes
-
2 l water
-
3 tbsp salt
-
2 tbsp white wine vinegar
-
1 l rapeseed oil
Do this:
-
Rinse and wash the potatoes. You can leave the skin on for extra flavor and crispiness.
-
Cut the potatoes into sticks about 1 cm thick.
-
Mix water, salt, and vinegar in a bowl. Add the potatoes and let them soak for about 20 minutes so the starch from the potatoes is drawn out.
-
Drain and dry the potatoes with paper towels or a kitchen towel.
Deep-fry the fries in a pot
-
Heat the rapeseed oil in a pot to 160 degrees.
-
Deep-fry the potatoes in batches for about 4-5 minutes until they are soft and nicely colored. Drain on paper towels.
-
Increase the heat and bring the oil to 180 degrees.
-
Deep-fry again for about 3 minutes until the potatoes have a crispy surface and a nice color.
-
Drain quickly on paper towels and salt immediately.
Fries in the air fryer
Making fries in the air fryer is the easiest way to get crispy, golden-brown fries every time. Plus, it doesn't require nearly as much oil as traditional deep-frying.
Do this:
-
Prepare the potatoes according to steps 1-4 above.
-
Place the potatoes in a bowl and pour over 2-3 tbsp oil. Toss to coat and season to taste.
-
Cook in the air fryer at 180 degrees for about 25 minutes.
-
Shake the basket after about half the time so they cook evenly.
-
Remove and salt to taste.

3 tips for extra crispy fries
-
Dry the potatoes thoroughly - damp potatoes won't get as crispy.
-
Double-fry – frying the fries twice gives a crispy surface and soft potato inside.
-
Don't overfill – cook in batches for even cooking and the best result.
